I’ve discovered these quick and easy protein snacks – Banana pikelets. Whip them up in about 5 minutes for hungry little tums!
1 mashed banana
1 egg lightly beaten
Two teaspoons flour (I use a gluten free mix at the moment)
Pinch of salt
Mix all together and drop spoonfills into a non-stick frypan (I grease with a touch of coconut oil).
Cook and flip after about 1-2mins per side (watch for little air bubbles to know when to flip)
Onto plate and into little tummies!
